Father’s Day Food Trip

Yesterday we went to the mall and celebrated father’s day. We ate our lunch and snack there but we had our dinner at our house. I cooked shanghai fried rice, lumpiang shanghai and bitter gourd with blackbeans, tofu and lechon.

Wanton Noodle Soup

It’s raining non stop for almost three days and in seasons like this, there’s no more appealing than a hot soup. I cooked a wanton noodle soup and my family loved it. Here’s the recipe.

1/4 kg. ground pork
1/8 kg. shrimp (chopped)
1 onion (chopped)
3 cloves garlic (chopped)
ground black pepper
1/2 tbsp. saltmolo or siomai wrapper
egg noodles
chinese pechay
pork boullion
msg (optional)

Mix the first six ingredients together. Wrap about 1 teaspoon of the mixture in a molo or siomai wrapper to make wanton. Set aside. Boil 8 cups of water. Drop wantons in the boiling water and let it boil for 5 minutes. Add the boullion and egg noodles. Boil for another 2 minutes. Then add the chinese pechay. Serve hot.

Creamy Gelatin For Dessert

It was my birthday yesterday. Thanks for those who greeted me especially to my friends here in blogosphere. My husband went to the office yesterday (he had to). Only me and my daughter were left in the house. We’ll just go out this weekend to celebrate.

It was my day so I took my time off. I didn’t do any household task and didn’t cook much food. My husband bought ice cream and I bought a “rellenong bangus” and mixed vegetables in the supermarket and cooked gelatin for dessert. It’s my Mom’s recipe and all of us love it.

1 pouch powdered gelatin
1/4 kg. white sugar
1 all purpose cream 250ml.
fruit cocktail

Cook gelatin (I used Mr Gulaman) as per package instructions but less 2 cups of water. If the instruction says 6 cups, make it 4 cups. Drain the fruit cocktail and add the juice in the water. Add all purpose cream and drops of vanilla. Mix until cooked.

In a moulder, scatter the fruit cocktail. Let it cool then place inside the refrigerator. Serve cold together with your favorite jelly or wafer.

We also had rellenong bangus. I fried the rellenong bangus and cooked the mixed vegetables in butter.

We also had ice cream for dessert.

Acid Reflux or Gerd

I was rushed to the hospital last monday (the whole story is posted on Topics On Earth), then consulted an ENT doctor last Tuesday and was diagnosed with acid reflux.

What is Acid Reflux?
Acid Reflux is a disorder that happens when acid of the stomach flows back into the esophagus up to your throat and voice box. This causes irritation and inflammation resulting in pharyngitis and laryngitis or hoarseness.

-on and off hoarseness
-frequent need to clear your throat
-voice breaks
-sour or bitter taste
-sore throat
-difficulty in swallowing (dysphagia)
-pain in swallowing (odynophagia)
-feeling like you are choking
-sensation of having a lump in the throat
-chronic cough
-sometimes bad breath

Avoid the following:
-fatty or fried foods
-spicy foods
-citrus and tomato-based foods
-caffeine (tea, coffee & cola)
cruciferous vegetables: cabbage, cauliflower, broccoli, and brussels sprouts
-milk and milk-based products containing calcium and fat within 2 hours of bedtime
-allioid vegetables like onion

Things you should do:
-reduce the amount you eat in the evening
-do not eat after 8PM or 3-4 hours prior to retiring for the night
-do not lie down just after eating
-eat larger meals for breakfast and lunch
-eat slowly and leisurely
-avoid eating too much
-drink 6-8 glasses of water per day
-stop smoking
-ensure good sleeping posture
-elevating your head and upper body by 6-8 inches when you are lying down helps limit reflux
-be sure to take any medication as directed
-visit your doctor for follow-up and progress of treatment

Things you should not do:
-don’t slouch
-don’t work out near bedtime
-don’t lift heavy object immediately after meals or do other things which put a strain on your stomach
-don’t constrict the stomach by wearing too tight-fitting clothes, too tight belts, girdles, pantyhose, etc.

If you are overweight:
-reduce weight by paying attention to the quality and quantity of your meals
-exercise according to the instructions given by your doctor

These are from the leaflet given to me by Dr. Cesar Joaquin A. Chavez, ENT-Head and Neck Surgeon. If you have the above symptoms, you may have Acid Reflux. Consult your doctor immediately.

Steamed Cassava

Last Sunday is our worst mother’s day celebration I had asthma attack again (grrr!!!) and these attacks started to piss me off. My hubby went to a drug store at 2am last Sunday just to buy my meds. We were able to sleep at past 3am. So we had no choice but to cancel our lunch out that day. Since I need some rest and my hubby doesn’t know how to cook we just ordered two boxes of pizza.

Blessing in disguise that I was able to make this steamed cassava last Saturday so we had our dessert.

1 kg. cassava
1/2 cup sugar
butter or margarine

Peel the cassava, wash then grate. Add vanilla and sugar then mix. Grease baking pan or llanera with butter or margarine. Fill the pan with the mixture. Steam for 30 minutes. Add margarine on top then serve.
