Tapa Recipe

Second to pandesal, tapsilog is Filipinos favorite breakfast. Tapsilog is combination of tapa, sinangag (fried rice) and itlog (sunny side up). This is a perfect breakfast for anyone expecting a very busy day. Tapa is either beef or pork marinated in soy sauce and lime juice with lots of garlic and a little sugar. It can be cured or uncured. I am making my own tapa that has no any preservative in it.
Ingredients:
1/2 kilo beef or pork sirloin (sliced thinly)
3 tbsp. brown sugar
1/3 cup soy sauce
3 tbsp. lime juice
1 whole head of garlic (minced)
1/2 tsp. ground black pepper
Procedure:
Wrap meat pieces between plastic or cling wrap then pound using meat mallet or the back of your knife until tender. Mix together the rest of the ingredients then marinade the meat overnight. Cut into small pieces then fry. Serve with sliced tomatoes or vinegar as dip.

    thanks! 🙂

ps. the tawilis is usually available in some wet markets (the one i usually go to is the ‘weekend market’ in Lung Center). i bought that bottled tawilis in SM hypermart; tasted good, but nothing beats the ‘real thing’. 😉
